I’m feeling good, so I’m cooking dinner!

What?!  Cooking?!  Truth be known that this is something that has been coming off of my “Must Do” list lately.  When I am on my chemo meds, I am not interested in cooking because I’m not really interested in eating.  I eat because I have to eat with my meds, but nothing particularly tastes good.

Beforehand, I got pretty good about making dinner consistently on nights that Mike and I would both be home…then the whole news that “cancer is back” came, and I was fine with taking cooking of my To Do list.  I used to be TERRIBLE at cooking, and I am not Paula Dean by any means, but I’ve improved greatly!  I just need quick and easy recipes.  I get so frustrated when it takes me over an hour to cook something, I mess up 20 dishes, it takes us 10 minutes to eat it, and then it takes me an hour to clean up the kitchen…uh…no thanks!  IF my meal was amazeballs, then maybe I wouldn’t care, but my meals are not anything that’s going to be featured at a restaurant.

So, if I am claiming to not be great in the kitchen, why oh why am I blogging about a meal I cook right now?  Because it tastes good, and it’s soooooo easy!  I mean, I’m a mom, so I know other moms can benefit from a recipe that is easy.  It’s just ravioli, but it tastes good, has few dishes to mess up and has few ingredients.  I think I need to find a cookbook called, “Dinner with 5 ingredients or less,” because those recipes make me happy.

For the moms that need an easy dinner…here you go…

Baked Ravioli

Ingredients:

1 package of frozen ravioli (either cheese or beef)

1 jar of pasta sauce

1 bag of mozzarella cheese

Preheat oven to 400 degrees.  In a casserole dish (I used a 9″x 9″ because it was just Mike and I eating, but you could use a 9″ x 12″ dish and won’t have left over frozen ravioli.)  Spray the dish with a nonstick spray.  Spread some pasta sauce on the bottom of the dish, lay a row of raviolis in the bottom of the dish, cover in pasta sauce, sprinkle mozzarella cheese on top.  Repeat another layer.  Cover with foil and bake for 30 minutes.  Remove the foil and bake for 15 minutes.

  1. There is a cookbook called the 5 ingredient cookbook. I think my mom gave it to me with high hopes. I’m pretty sure it got donated when I moved. #notacookeither ????????
